Grilled Salmon With Tomato/Basil Salsa

Delicious Italian Salmon
Ingredients:
12 ounces salmon fillets, cut into 2 inch pieces
1/2 cup fresh cherry tomatoes, cut in quarters
1 roasted red pepper, cleaned and finely chopped
1/2 cup sweet champagne (sparkling wine or prosecco can be used)
1 garlic clove, finely chopped
1 tablespoon brown sugar
1/2 cup fresh basil, chopped
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
salt and pepper
Directions:
1. Pre heat and oil your grill to prevent fish from sticking.
2. Rub salmon with olive oil on both sides and set aside.
3. Mix all other ingredients in a bowl and refrigerate.
4. Sprinkle salmon with salt and pepper and grill on both sides for 3-4 minutes each.
5. Plate salmon and top with salsa, serve immediately.
