Grilled Red Snapper

Very simple & very tasty. It only takes 10-15 minutes to make, & serves 6.
Ingredients:
olive oil
bacon grease
3 lbs red snapper
salt
white pepper
paprika
1/2 cup butter, melted
2 garlic cloves, crushed
1/2 lemon, juice of
Directions:
1. Heat large griddle to smoking point.
2. Grease liberally with olive oil & bacon grease.
3. Season & sear fish on both sides, turning carefully.
4. Cook quickly for 3-5 minutes per side.
5. Heat butter, garlic, & lemon juice to bubbling & serve over fish.
