Grilled Red Onions

These onions are sliced and grilled with a great sauce that adds a lot of flavor. Serve these up as they are or used these onions in any recipe that calls for them.
Ingredients:
2 pounds red onions
1/2 cup fresh parsley, chopped
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 1/2 teaspoon fresh rosemary, chopped
1 clove garlic, minced
salt and pepper
Directions:
1. Heat vinegar, garlic and rosemary in a sauce pan until hot. Don't boil.
2. Let stand 20 minutes.
3. Warm oil in a separate pan.
4. Slice onions into 1/2 inch slices. Lay out on a cookie sheet and brush both sides with oil.
5. Sprinkle salt and pepper over onions.
6. Grill over medium heat for 4-6 minutes.
7. Let the onion slices slightly char.
8. Remove from grill and separate into rings.
9. Toss with vinegar mixture and parsley.
