From Martha Stewart Living. I cut this recipe out years ago and finally tried it this past summer. It is very easy and tasty. The recipe recommends serving with couscous.
Ingredients:
1/2 cup unsulphured molasses
2 tablespoons lemon juice
1/2 teaspoon ground ginger
2 (8 ounce) pork tenderloin, trimmed
salt & freshly ground black pepper
cooking spray
Directions:
1. In a small bowl, combine molasses, lemon juice, and ginger; set aside.
2. Rub pork with salt and pepper. Heat grill to medium high.
3. Spray both grill and pork with cooking spray. Sear pork 2 to 3 minutes on all sides.
4. Brush on molasses glaze. Cook, covered, turning and glazing when needed until an instant-read thermometer registers 150 degrees when inserted into the middle, about 12 minutes more.
5. Let the pork rest 10 minutes before slicing.
