Grilled Peppers In Criolla Sauce

Grilling season is here and these make for a great side dish
Ingredients:
4 bell peppers, one of each color, red, green, orange and yellow
2 tomatoes, seeded and finely chopped
1 onion, finely chopped
1 serrano chile, finely chopped
1 clove garlic, finely chopped
1 tbls. parsley, finely chopped
2 1/2 tbls. olive oil
1 1/2 tbls. red wine vinegar
salt and pepper to taste
Directions:
1. Heat grill to high
2. Grill peppers, turning until skins are blackened
3. Transfer peppers to bowl and cover tightly with plastic wrap
4. Let cool enough to handle
5. Peel peppers
6. Halve lengthwise, and remove seeds and stems
7. In another mixing bowl, add remaining ingredients
8. Add peppers and toss to combine
