Grilled Mexican Farmers Market Corn

This is the amazing roasted corn you get at the fair or at the hispanic farmers markets. It has to be the most delicious and easiest ways to prepare corn EVER. The graded queso cotija makes the dish. It is easy to find in any mexican market for Foods Co. and totally worth the trip.
Ingredients:
4 ears corn on the cob
1/4 cup mayonnaise (any fat variety)
1/2 cup queso cotija cheese (crumbled mexican feta or parmesan cheese)
1 dash cayenne pepper or 1 dash chili powder
Directions:
1. Fire up the grill to medium heat.
2. Remove skill and husks from corn and scrub clean under water.
3. Roll each cob in tin foil and twist the ends.
4. Place on the grill and cook 15 to 20 minutes, rotating corn from time to time.
5. When corn is done, carefully remove hot tin foil.
6. Place queso cotija on a flat plate.
7. Brush corn with a thin layer of mayonnaise and roll in queso cotija.
8. Sprinkle corn with your choice of cayenne pepper (really hot) or chili powder (not hot).
9. Serve hot and enjoy!
