Roast is marinated 'overnight' and then grilled. Tastes amazing, we love it. Got this recipe online last year. HINT: I prepare this on a day off, when I get up in the morning, and marinade all day, as the meat needs to be turned while marinating, and marinade spooned over the top. Read more . Well worth that little bit of extra effort. (I put the roast in a big ziploc baggie, and turn the baggie). Throw some potatoes wrapped in foil on the grill, and fix a salad while the meat and potatoes cook. Easy and wonderful!
Ingredients:
4 pounds round roast, cut 2 thick
2 teaspoons unflavored meat tenderizer
3 green onions, chopped
1 clove garlic
1/4 medium green bell pepper, diced
2 stalks celery, diced
1/2 teaspoon oregano
1/2 teaspoon rosemary
1 dash cayenne pepper
1 tablespoon worcestershire sauce
3/4 cup burgundy wine
3 tablespoons olive oil
Directions:
1. Slash fat edges of roast.
2. Sprinkle both sides of roast evenly with meat tenderizer.
3. Pierce meat deeply all over with fork.
4. Place in shallow dish and top with green onions, red pepper, and celery.
5. Combine garlic, oregano, rosemary, cayenne pepper, Worcestershire, wine, and oil and pour over meat.
6. Refrigerate overnight, turning meat several times, each time spooning the chopped ingredients over top again.
7. Sear both sides over glowing coals.
8. Raise grill temperature and continue cooking, having meat about six inches from heat, until done as desired.
9. Allow from 50 - 60 minutes for total cooking time.
