Grilled Lemony Garlic Salmon

My family loves salmon but cooking it indoors is a definite no no as our kitchen opens to the rest of the house - hence, the grill. Recipe is for one 4 oz serving of salmon fillet, multiply according to number of servings. If you do not wish to BBQ, you can do this in a grill too. Have more lemon wedges on hand for eaters who like extra tang. Bon appetit!
Ingredients:
4 ounces salmon fillets (1 piece)
1/4 teaspoon lemon salt (or to taste)
1/8 teaspoon black pepper
1/8 teaspoon lemon zest, grated
1 teaspoon butter
2 garlic cloves, finely chopped
1/8 teaspoon basil, finely chopped
1/8 teaspoon parsley, finely chopped
1/8 teaspoon red chile, finely chopped (optional for a bit of zip)
2 lemon wedges
Directions:
1. Gently rub lemon salt on salmon fillet on both sides. Set aside to marinade.
2. Chop garlic, basil, parsley and chillie.
3. Grate lemon zest.
4. Combine garlic, pepper, basil, parsley, lemon zest and chillie (if used) in a bowl, mix well.
5. Place ingredients on a piece of foil in this order: 1/2 tsp butter, salmon, garlic mixture and other half butter.
6. Preheat grill to approximately 400°F.
7. Wrap fish in foil, seal edges as tightly as possible.
8. Place fish on grill folded side down for approximately 5 to 7 minutes.
9. Turn foil pack over and open the foil, squeeze juice of 1 lemon wedge.
10. Cook for another 3 to 5 minutes. Test for doneness with a fork.
11. Garnish with lemon wedge and serve.
