Grilled Ham and Egg Salad Monte Cristos

The hearty ham and toasted bread make this a deliciously different kind of egg salad sandwich.
Ingredients:
6 hard-boiled eggs, chopped
1 cup diced cooked ham
1/2 cup finely chopped celery
1 tablespoon minced onion
1/2 cup mayonnaise
2 teaspoons prepared mustard
1 teaspoon prepared horseradish (or more)
1/2 teaspoon salt
1/4 teaspoon pepper
12 slices whole wheat bread or 12 slices white bread
cooking oil
1/2 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 cups milk
2 eggs, lightly beaten
Directions:
1. Combine hard-cooked eggs, ham, celery, onion, mayonnaise, mustard, horseradish, salt and pepper; spread on six slices of bread. Top with remaining bread and set aside.
2. In a bowl, whisk batter ingredients until well blended. Heat about 1/2 inches of oil in a large deep skillet. Dip sandwiches into batter.
3. Fry in hot oil for 3 minutes on each side or until golden brown. Drain on paper towels.
