Ingredients:
3 medium zucchini
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1/4 teaspoon black pepper
1/2 teaspoon salt
cooking spray
Directions:
1. Cut the zucchini into matchstick pieces. (the original recipe says to peel the zucchini).
2. Combine the oil, lemon juice, garlic, pepper and salt in a medium sized bowl.
3. Toss the zucchini in the garlic mixture and let stand for 10 minutes.
4. Preheat the grill and spray with cooking spray.
5. Grill the zucchini 4-5 minutes or until tender-crisp.
