Grilled Fish With Cayenne And Garlic Sauce

Very quick and easy to do, a nice way to add flavor to fish fillets with a very light and healthy dressing, using a little olive oil, an excellent source of Omega-3.
Ingredients:
1 pound skin, boned white fish filets (i used halibut)
1 whole lemon
1/4 cup extra virgin olive oil
4 garlic cloves, sliced
1/2 chili, finely sliced or
1/2 tsp. cayenne
1/2 tsp sweet paprika
salt
Directions:
1. Wash lemon, grate zest and reserve.
2. Squeeze lemon over fish fillets, salt to taste and let rest for about 1/2 hour, then pat dry on paper towel and sprinkle reserved zest over the fish.
3. Heat grill and cook fillets for 2-3 minutes on each side until done, watching not to overcook. Arrange on a serving plate and keep warm.
4. In a small skillet heat oil on medium heat and cook garlic and chili until garlic is nicely crispy and golden. Do not burn. Add paprika, quickly mix and IMMEDIATELY remove skillet from heat. Lightly salt.
5. Pour skillet content over the reserved warm fillets, sprinkle fresh grated parsley on and serve while hot.
