Grilled Eggplant And Red Peppers

Ingredients:
2 red bell peppers
8 8 1/2 inch slices eggplant
3 tablespoons evo or white truffle oil
tablespoon red wine vinegar
1 tablespoon chopped fresh oregano
1/2 c. crumbled feta cheese
salt and pepper
Directions:
1. Coat 2 red bell peppers, cut into wedges, stems and seeds removed, and 8 1/2-inch slices eggplant with olive oil.
2. Grill;
3. arrange on a platter.
4. Top with 3 Tablespoon olive oil and 1 Tablespoon red wine vinegar. Add 1 Tablespoon chopped fresh oregano and 1/2 cup crumbled feta.
5. Season to taste with salt and pepper
