Ingredients:
grilled eggplant slices
fresh mint - roughly chopped
feta cheese - crumbled
whole wheat cous cous
olive oil
balsamic vinegar ( optional)
Directions:
1. Prepare cous cous according to package directions adding 1 tbsp oil to cooking water..
2. Mound cous cous on plate.
3. Top with eggplant slices, feta and mint.
4. Serve.
5. * can be drizzled with some balsamic vinegar if so desired.
