This recipe is another component of the lovely menu called Fresh From the Farm featured in the July 2006 Gourmet Magazine. It included this beautiful and flavorful grilled corn and paired it with Grilled Salmon with Lime Butter Sauce, Angel-Hair Pasta with Fresh Tomato Sauce and Green Beans with Arugula - and we made them all. Read more . I am submitting those recipes separately. I've made this menu numerous times in whole and in part because it is so delicious and fresh. Corn grilled in its husk isn't just easy, it's also more delicious than grilled shucked corn. The silk adds sweetness and also provides an extra layer of moisture that protects the kernels from the heat so they stay tender. You can also prepare the corn in your oven - instructions below. You won't get that lovely grilled flavor, but a nice roasted one. Enjoy.
Ingredients:
8 ears of corn in the husk
1/4 cup chopped mixed fresh herbs such as chives, parsley, basil, sage, and tarragon
you will need 6 tablespoons of lime butter sauce
(it takes only 5 minutes to make this fantastic sauce. once you see how versatile it is — it works perfectly with the grilled salmon and the grilled corn — you'll want to make it for a whole host of your summer favorites.)
1 large garlic clove, chopped
1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1 stick (1/2 cup) unsalted butter, melted
Directions:
1. For Lime Butter Sauce:
2. Purée garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend until emulsified, about 30 seconds.
3. Reserve 6 tablespoons. (Use the rest for Grilled Salmon with Lime Butter Sauce or for some other lucky dish.)
4. Lime Butter Sauce Note:: Lime butter sauce can be made 1 day ahead and chilled, covered. Stir before using.

6. Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
7. Grill corn (in husks) on lightly oiled grill rack, turning, covered, until kernels are tender, 20 to 30 minutes. Remove corn from grill and let stand until cool enough to handle but still warm, about 10 minutes.
8. Discard husks and stem ends from corn. Cut kernels off cobs with a large knife and toss with herbs and prepared Lime Butter Sauce.

10. Oven Preparation Instructions:
11. Corn Note: If you aren't able to grill outdoors, corn (in husks) can be roasted directly on middle rack of a preheated 350°F oven 40 minutes. It will give you a nice roasted flavor.
12. Discard husks and stem ends from corn. Cut kernels off cobs with a large knife and toss with herbs and prepared Lime Butter Sauce.
