Grilled Corn And Black Beans Salad

A versatile and colorful salad that can be served over chips or with chicken, salmon or steak. Very easy to make. 2001 Cooking Light
Ingredients:
3 ears shucked corn
1/2 c fresh lime juice (about 2 limes)
1/3 c minced red onion
1/3 minced fresh cilantro (i leave this out)
3 tbl. white vinegar
2 tsp. sugar
2 tsp. ground cumin
2 tsp. chili powder
1 (15-ounce) can black beans, drained
lime wedges (optional)
Directions:
1. Prepare grill.
2. Place corn on a grill rack; grill 20 minutes or until corn is lightly browned, turning every 5 minutes. Cool. Cut kernels from corn; place in a bowl.
3. Add juice and remaining ingredients; stir gently. Cover and chill 1 hour.
4. Garnish with lime wedges, if desired.
