Only 5 ingredients and things I almost always have on hand! I think this sounds great and easy to whip up on my next I don't feel like making dinner but everyone's hungry day! Recipe source: Bon Appetit (May 2005)
Ingredients:
12 boneless skinless chicken thighs
olive oil
3 tablespoons rosemary, minced
salt
pepper
Directions:
1. Place chicken between two sheets of plastic wrap or waxed paper and pound with a meat mallet until chicken is 1/4 inch thichk.
2. Drizzle olive oil over chicken and sprinkle with rosemary, salt and pepper. (Can be prepared 4 hours ahead, refrigerated).
3. Prepare barbecue (medium high heat).
4. Grill chicken until cooked (3-5 minutes per side).
