Grilled Chicken Tacos

  • 4 tbsp olive oil
  • 1/2 tsp ground pepper
  • 1/2-1 chipotle chile , in adobo. chopped very fine. (if you use a whole pepper it will be a little spicier)
  • 1 tsp adobo sauce , from the chipotle peppers can
  • 1 lb chicken , tenderloins. (you may substitute breast as well)


  1. To make Marinade: In a small bowl whisk together the marinade ingredients. Rinse the chicken under cold water dry with paper towels. Put marinade and chicken in ziplock bag for at least 1 hour.
  2. Grill chicken over Medium High heat 6-10 minutes (for chicken tenderloins) until meat is fully cooked, turning once. Cut chicken into bite sized pieces.
  3. Put Meat in your favorite hard shelled or softshelled Taco. Top with fresh Guacamole, Cheese, and Lettuce. Accompany with a Dash of Cholula Hot Sauce.
