Grilled Chicken Spinach Cranberry Salad

Great spring salad. Leave off the chicken when serving full course meal. Add things like mushrooms. boiled egg, mandarin orange to make a full meal salad.
Ingredients:
salad
2 - 8 oz boneless skinless chicken breast
8 oz fresh spinach leaves
1/2 c feta (or goat) cheese, crumbles
1/4 red onion (small), sliced thinly
1/2 c dried sweet cranberries
2 t almonds, toasted, sliced (optional)
dressing
1/2 c balsamic vinaigrette dressing (bottled)
2 t orange juice (without pulp)
1 t orange zest
Directions:
1. Grill Chicken 7-8 min per side until done but still juicy.
2. Cool, then slice diagonally and chill for 20 min.
3. Wash (well chilled) spinach and tear into bites.
4. Add 1/2 cheese and 1/2 onion and toss.
5. Combine dressing components in a small bowl and pour over salad ad toss.
6. Sprinkle on remainng cheese.
7. Top with grilled chicken pieces, cranberries and almonds.
8. Serve innediately.
