Grilled Asparagus

Nothing screams spring more than asparagus. And nothing screams summer's coming than dusting off the grill. Grilling this springtime treat renders its sweetness and is so much more interesting than steaming it.
Ingredients:
farmers'-market-fresh asparagus (1 lb. or more)
extra virgin olive oil
kosher salt
freshly ground pepper
Directions:
1. Preheat grill to high - all burners full blast.
2. Snap ends off asparagus where they naturally break.
3. With a gently hand and vegetable peeler, remove the fibrous skin on the ends.
4. Drizzle with a little oil (
5. Sprinkle with S & P to taste.
6. Gently lay asparagus on grill (perpendicular to grates so they don't fall through).
7. Cover lid immediately.
8. After about 2 minutes, roll them to char other side.
9. Cover, then remove after about 2 more min., or until lightly charred and done to your liking.
10. Boost flavor when serving: squirt on some lemon juice, sprinkle with lemon zest and/or fresh herbs, drizzle with balsamic, or just go naked!
