In this salad, you'll taste a delicious marriage of flavors as candied nuts, crisp bacon, and Parmesan cheese are tossed with greens and dressed in a wine vinaigrette. For the dressing, look for a Pinot Noir whose label boasts notes of black cherry. Then serve the same bottle to start off the meal. Ingredients:
1/2 cup extra virgin olive oil |
3 tablespoons pinot noir |
1 tablespoon white vinegar |
2 teaspoons dijon mustard |
1 small shallot, minced |
1/8 teaspoon salt |
1/8 teaspoon sugar |
1/8 teaspoon freshly ground pepper |
6 to 8 cups mixed salad greens |
1 (8-ounce) package sliced fresh mushrooms |
6 slices bacon, cooked and coarsely crumbled |
candied walnuts |
freshly shaved parmesan cheese |
Directions:
1. Combine first 8 ingredients in a jar. Cover tightly and shake vigorously until blended. Toss greens, mushrooms, and bacon in a salad bowl. Drizzle with dressing; toss gently. Sprinkle with Candied Walnuts and Parmesan cheese. |
