Green Velvet Soup
Ingredients:
1/2 cup yellow onion
1 clove garlic, minced
1/2 cup celery, chopped
39 grams (3/8 cups dry) split peas
1/2 tbsp (1 whole) bay leaves
6 cups vegetable stock
1 zucchini, chopped
1 1/2 cups broccoli
1 1/2 cups spinach
30 grams (1/2 cup) instant potato flakes
Directions:
1. Boil onion, garlic, celery, peas and bay leaves in 3 cups of stock for 1 hour.
2. Add zucchini, broccoli, spinach and the rest of stock. Boil until all are tender and soup has reduced
3. Remove from heat and puree in blender in small batches
4. Stir in potatoes and season to taste
