Faux mincemeat, no meat involved, but tart spicy apples. Great filling, or chutney like side for roast ham or pork.
Ingredients:
3 cups green tomatoes, washed and chopped
3 cups of apples, peeled cored and chopped
2 cups of firmly packed dark brown sugar
1/2 cup of white vinegar
1/2 teaspoon of cinnamon
1/4 teaspoon of cloves
1/4 teaspoon of fresh ground nutmeg
1/4 teaspoon of salt
1 1/2 cups of raisins
1/2 cup of butter
Directions:
1. Put tomatoes in colander and drain well.
2. Discard the juice.
3. In a large saucepan, combine the tomatoes and apples with the brown sugar and vinegar.
4. Stir well and heat slowly to the boiling point, stirring often.
5. Add spices and salt.
6. Reduce heat and simmer for 3 hours, adding the raisins at the one and a half hour mark.
7. Stir in butter and remove from heat.
8. Allow to cool before using as a pie filling.
9. Keeps well canned or frozen.
10. A few drops of brandy can be added just before baking to enhance the flavor of the chutney.
