Ingredients:
1/4 cup minced shallot
2 tablespoons red wine vinegar
1 tablespoon dijon mustard
1/4 cup finely diced cornichon
1 tablespoon capers
3/4 cup olive oil
1/2 cup minced parsley
Directions:
1. Whisk together shallots, vinegar, mustard, cornichons and capers.
2. Whisk in the olive oil in a steady stream, then stir in the parsley.
3. Set aside at least 30 minutes to combine flavors before serving.
