Green Salad with Mustard Vinaigrette

A vinaigrette that’s pleasingly sharp thanks to apple cider vinegar and grainy mustard tempers the lushness of the onion pie . Dress the greens just before serving.
Ingredients:
1/4 cup cider vinegar
4 teaspoons grainy mustard
1/2 teaspoon sugar
1 cup vegetable oil
8 cups mixed greens such as mesclun or a mix of romaine and boston and bibb lettuces
Directions:
1. Whisk together vinegar, mustard, sugar, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.
2. Add lettuce and toss to coat.
