Cheesy goodness.
Ingredients:
1/4 cup. butter or margarine
1/4 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. pepper
2 cups milk
1 1/2 cups cheddar cheese
3 cups rice (instant), cooked and refrigerated
1 package ( 16 oz) frozen broccoli, thawed
1/4 cup chopped onion
1/4 cup bread crumbs
1 tbsp. butter or margarine
Directions:
1. In a large saucepan, melt butter, add flour, salt and pepper. Cook stirring until mixture bubbles. Add milk stirring constantly, until mixture comes to a boil and thickens. Boil 1-2 minutes. Remove from heat. Stir in cheese until melted. Combine cooked rice, broccoli, onion, and cheese sauce. Turn onto lightly greased 2 -qt. casserole.
2. In small bowl, combine bread crumbs and butter, sprinkle over top.
3. Bake at 350* for 30-35 minutes or until hot and bubbly.
