A recipe copied from somewhere years ago. A good side dish with pork.
Ingredients:
2 (4 ounce) cans green chili peppers
2 cups chicken broth
1 cup chopped fresh parsley
1 medium onion, chopped
1/2 teaspoon chopped garlic
2 tablespoons olive oil
1 cup brown rice
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter
Directions:
1. Puree 1/4 cup broth, peppers, parsley, onion and garlic in food processor.
2. Lightly brown rice in butter. Add puree and cook 5 minutes.
3. Add remaining ingredients, cover and cook 1 hour on low.
