The green in this rice is parsley. I really like it with BBQ chicken. Two people have easily consumed it at one meal. So you may want to double it. The original recipe calls for 2 T chopped pimento if desired. I don't.
Ingredients:
1 cup cooked white rice
1 cup milk
4 tablespoons melted butter
1/2 cup grated cheddar cheese
1/2 medium onion, chopped fine
1/4-1/2 cup chopped parsley
1 egg, well beaten
1/2 teaspoon salt
1/4 teaspoon paprika
Directions:
1. Mix all ingredients and put in a buttered casserole.
2. Bake at 350 degrees till firm. About 45 minute.
