Green Pea Soup With Smoked Ham

Ingredients:
1 tablespoon butter
1 large onion, chopped
2 (14 ounce) cans chicken broth
1 (14 ounce) package frozen mashed potatoes
2 cups frozen peas
1 teaspoon dried tarragon
1 1/2 cups milk or 1 1/2 cups light cream
1/4 teaspoon pepper
6 ounces smoked ham, finely diced
Directions:
1. In large saucepan, melt butter. Add onion and cook until softened. Add chicken broth, potatoes, peas, tarragon and 1 1/2 cups water.
2. Bring to a boil, reduce heat, cover, and cook until potatoes are smooth and dissolved, about 8 minutes.
3. Pulse soup in food processor or blender.
4. Return puree to saucepan. Stir in milk and season with pepper. Ladle into bowls and top with ham.
