This vegetable accompaniment is very common in Portugal. It can be prepared with tender turnip-tops, spinach or any greens of your preferance. It is very good with meat, fish or even over pasta with cheese on top.
Ingredients:
1 lb cleaned turnip-tops or spinach (only leaves)
2 tbsp olive oil
1 tbsp flour
few drops lemon juice or scant tsp wine vinegar
1 clove garlic (whole)
2 tbsp single cream
salt and pepper
Directions:
1. Cook the greens until tender. Drain and cut them to a pulp.
2. Fry the garlic in the oil over low flame, until the garlic is golden, then discart it (the objective is to flavor the oil).
3. Add the flour, mix to a paste, combine the green pulp and boil gently for a couple of minutes, to cook the flour and thicken the mousse.
4. Add the cream, stir and season with a few drops of lemon juice and salt and pepper to taste.
