Green Leaves With Grilled Goat Cheese

NIce light and refreshing tapas or salad for any occasion. I love grilled goat cheese.
Ingredients:
11 oz goat cheese
1 tbsp oil
1 bag baby green leaves
vinaigrette
1/2 cup extra virgin olive oil
3 tbsp sherry vinegar
1 tbsp honey
salt
pepper
Directions:
1. Vinaigrette:
2. Dissolve salt, pepper and honey in the vinegar and beat in the extra virgin olive oil until an emulsion forms.
3. Cut the cheese into 3/4 slices, brush with oil, and grill until golden.
4. Serve onto plates, add the salad and dress with vinaigrette.
