Another one from In the Spirit. Nice balance of flavors and a pretty green to boot.

Ingredients:

1 fluid ounce hendricks gin

1 fluid ounce de kuyper green creme de menthe

pineapple juice

Directions:

1. Fill your cocktail shaker with ice and add the De Kuyper Crème de Menthe- Green and gin. Shake well and strain into a martini glass. Top up carefully with pineapple juice.
