I love this dressing, but there is no company making it, at least a true version. I arrived at mine, by comparing all the possible recipe variations on the internet, and tested the promising ones. My older brother used to work in an Italian restaurant when young, and the chef would give him some to bring home. It was awesome, and I thought it was the best dressing in the world. That chef carried his recipe to the grave.
Ingredients:
2/3 cup mayonnaise
1 cup sour cream
1/3 cup extra virgin olive oil
2 garlic cloves, minced
5 tablespoons chives, chopped fine
1 tablespoon fresh tarragon, diced fine (option)
2 tablespoons fresh lemon juice
2 1/3 tablespoons tarragon vinegar
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon anchovy paste (to taste)
1/4 cup heavy cream
Directions:
1. Combine all the ingredients in a blender, and blend together well. It should have a very lite green color. Store, sealed in the refrigerator for a day before using. The flavors will blend and improve with time.
2. Serve it on the salad of your choice. Works especially well on seafood and seafood salads.
