Lovely Tangy Green Dressing, great for pasta or potato salads. Also good for a dip for veggies or breads. Assuming 1 serving = 1/8 cup. Makes 1 1/2 cups. Recipe from Green Cuisine Cookbook, 2006
Ingredients:
1 medium avocado
1/4 cup cider vinegar
1/4 cup water
1 1/2 tbsp lemon juice
1/8 cup sunflower oil
1 1/2 tbsp rice syrup
1/2 tsp salt
1 pinch cayenne
1/2 garlic clove, minced
1 tbsp fresh basil, chopped
1/8 cup parsley
1/8 cup green onion
1/4 cup spinach
Directions:
1. Half the avocado, remove the pit, scoop the flesh into the blender, add everything else and blend very thoroughly.
