Cam felt left out that he didn't have a recipe. I found this in The Clean Home Journal , and tweeked it to our tastes. Cam calls these egg cups Green Eggs and Ham although they are not green. If any one has suggestions on how to make them green, please let me know! Read more !!!
Ingredients:
12 slices deli ham, the more circular the better, about as thick as a slice of american cheese.
wildflower honey
2 tbs finely chopped chives
12 eggs
about 1/2 cup shredded swiss cheese
salt and pepper to taste
Directions:
1. Grease/butter/oil/spray all 12 muffin cups in a standard size muffin tin.
2. Press ham slices into each cup, to line it. Ends will stick up, it's okay.
3. Give each ham cup a squirt of honey, about 1/2 tsp each. Add 1/2 tsp chive and a sprinkle of cheese, about a Tablespoon each.
4. Crack one egg into each ham cup.
5. Bake until whites are cooked and yolks are firm, about 20 minutes. If you notice bubbles while they are cooking, pop them with a toothpick, although I've not had any when I've made them.
6. Lift out with a spoon and place on serving plate.
7. We like these with hashbrowns.
