Green Egg Scramble For One

I had given up sugar for a week. That, along with wanting something a little heartier for breakfast (other than a piece of fruit) led to this tummy filling treat. This dish reminds me the Callaloo I had while in Jamaica.
Ingredients:
1/2 to 3/4 cup leftover steamed greens (collard, spinach, turnip, whatever)
1 tbsp. chopped onion
1 clove minced garlic
2 slices cooked turkey bacon, crumbled
1 egg, slightly beaten
1 tsp. red pepper flakes
salt and pepper to taste
cooking spray
Directions:
1. Spray saute pan with cooking spray and heat to medium/medium high
2. Saute onion and garlic until just tender
3. Toss in greens, bacon and seasonings
4. Add egg and stir until egg is thoroughly cooked.
5. Remove from heat and serve.
