Green Chili Cheese Omelets

The hotter the better. These omelet should be made with hot green chili. Try to find Hatch Green Chili or a green chili from New Mexico, USA. Salt and pepper to taste. To lower calories leave out the Cheese.
Ingredients:
4 eggs
1/4 cup 2% milk
1/4 cup green onions
1/8 cup green chili
1 oz cheddar cheese
1/2 tsp black pepper
1/2 tsp salt
1 clove of garlic
Directions:
1. Beat eggs in a bowl with milk, chopped onions, crushed garlic, salt, and pepper. To make the omelet fluffy, whisk the eggs until thoroughly beaten. The more air the more they fluff.
2. Shred cheese and chop green chili. Mix together.
3. Heat oil coated skillet to medium/high.
4. When the skillet gets hot add the egg mixture to the skillet.
5. With a spatula, push the egg away from the edge of the skillet towards the center, you want to let the uncooked eggs to run under the cooked egg
6. When the egg stats to turn white and the edge gets a little crispy add the Cheese and Green Chili over the egg.
7. Then fold the egg in half making a half-moon with cheese an chili in the middle.
8. Cook for 1/2 minute to a minute making sure it does not stick to the skillet.
9. remove from heat and serve.
