Green Chile Stew

Ingredients:
1 lb lean pork, cubed
1 lb lean beef, cubed
1 tablespoon vegetable oil
1 large onion, chopped
1 green pepper, chopped
1 cup chopped celery
3 cloves garlic, minced
8 hot green chilies, chopped
2 large potatoes, diced
3 tomatoes, chopped
1 can beef broth
1 cup water
1/2 teaspoon dried oregano
Directions:
1. Heat the oil in a large non-stick frying pan, cook the garlic for a few minutes and then add the pork and beef and cook until browned.
2. Place the garlic meat mixture in a large pot and add the remaining ingredients.
3. Bring to a boil then cover and simmer on a low heat for an hour or so until very tender (meat falling apart).
