This is a tried and true recipe I make all the time. Super easy.We do this by itself or the next day wrapped in flour tortillas with eggs and cheese. The large cans of chiles and enchilada sauce are cheaper in the ethnic section of the store. Ingredients:
4 lbs pork, cubed |
28 ounces green chilies, chopped |
28 ounces green enchilada sauce |
1 onion, chopped |
1 tablespoon ground cumin |
Directions:
1. Cube the pork and brown with the onion. 2. Add the remaining ingredients and simmer for two hours on low or until soft. 3. Serve in a bowl with sour cream and or cheese as garnishes or wrapped in a flour tortilla. Eggs the next day are dynamite with this as a wrap. 4. Hotter palettes can add some chopped jalapenos and green Tabasco like I do. |
