Green Chile Casserole

a great casserole for cold nights. it's got just enough kick. very hearty and filling. goes great with garlic bread and salad!
Ingredients:
1 lb ground beef
4 (7 ounce) cans green chili peppers or 4 fresh green chili peppers
1 red onion
2 (8 ounce) cans cheddar cheese soup
1 lb shredded medium cheddar
1 cup breadcrumbs
1/2 cup green onion
2 tablespoons minced garlic
5 corn tortillas
vegetable oil
salt and pepper
Directions:
1. brown meat, drain and pour back into pot.
2. add canned chiles (if using fresh, broil until black, remove skin and seeds, chop fine).
3. chop and add red onion.
4. add garlic.
5. add salt and pepper.
6. add cream of cheese soup.
7. stir together and put over medium heat stirring occasionally.
8. salt and pepper to taste.
9. chop green onion and mix with bread crumbs.
10. fry tortillas in vegetable oil (about 2 minutes per tortilla).
11. line small glass baking dish with tortillas.
12. scoop in meat mixture and spread evenly.
13. evenly sprinkle shredded cheese on top of bread crumbs.
14. sprinkle bread crumb and green onion mixture evenly over top.
15. broil until cheese is melted and topping is crispy.
