Green-Cabbage Coleslaw With Vinaigrette

This is a quick and easy recipe to make. It can be made the day before you need it, and will save you that much time on the day of preparing your special dinner -
Ingredients:
1/2 cup champagne vinegar
5 tablespoons extra virgin olive oil
1 1/2 teaspoons coarse salt
fresh ground pepper
1 head cabbage, thinly sliced
Directions:
1. Combine vinegar, oil, salt and pepper in a large bowl. Add cabbage and toss. Cover with plastic wrap, and refrigerate for at least 5 hours, or overnight to allow the flavors to meld.
