Green Brinjal With Tofu

Ingredients:
mint leaves for garnishing
2 tsp dried shrimp , chopped or vegetable stock
12 oz long green brinjal , sliced
6 oz tofu cut into cubes
make smooth paste
2 chilli padi
2 garlic
2 corriander stalks
1 s.onion
2 tbsp lime juice
Directions:
1. Heat some olive oil .
2. Fry the paste high heat one minute .
3. Add the brinjal .
4. Cook for 4 to 5 minutes .
5. Add the tofu and the shrimp / stock .
6. Cook for 4 to 5 minutes .
7. Garnish with mint leaves .
