Green Beans With Roasted Peppers And Bacon

Ingredients:

  • 1 1/2 lb green beans
  • to taste --- salt

Directions:

  1. Trim the stem ends from the green beans.
  2. Wash and drain the beans.
  3. Boil the beans in a large pot of salted water until just tender.
  4. Drain.
  5. Rinse under cold water to cool the beans and stop the cooking, or drop them into ice water.
  6. Drain again.
  7. Refrigerate until needed.
  8. Roast and peel the peppers.
  9. Trim and discard the stem, seed core, and inner membranes.
  10. Cut into batonnet. (thin stick-like strips)
  11. Cut the bacon into batonnet about 1 inch long.
  12. In a heavy sauté pan, cook the bacon over moderate heat until it is crisp.
  13. Remove the bacon from the pan with a slotted spoon and reserve.
  14. Reserve about 2 oz of the fat in the pan, discarding the rest.
  15. Add the beans and the red peppers to the pan with the bacon fat and toss over heat until hot.
  16. Taste and add salt if necessary.
  17. The salt from the bacon may be enough.
  18. Add the crisp bacon and toss to mix.
  19. Serve immediately.

  21. Variations:
  22. Green Beans with Pecans and Browned Shallots
  23. -
  24. Omit the bacon and peppers.
  25. Brown 12 oz thinly sliced shallots in butter.
  26. Add 12 oz broken pecans and continue to cook until the pecans are hot.
  27. Reheat the beans in butter instead of bacon fat, and toss with the shallots and pecans.
