Green Beans in Tomato Vinaigrette

Ingredients:
1 1/2 lbs green beans
1/4 cup olive oil
2 anchovy fillets
4 garlic cloves
1 cup tomato
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons red wine vinegar
Directions:
1. Olive oil in a pan & let heat.
2. Put in crushed garlic & anchovy fillets.
3. Add green beans & peeled/chopped tomatoes & stir.
4. Let simmer for a little bit 5 min then add red wine vinegar and let sit for another 5 minute
5. Season with salt and pepper and serve as a side dish or over spinach.
