Green Beans Greek Style

A simple and tasty green bean casserole with tomatoes. Serve as a vege side for 4 to 6 people
Ingredients:
1 1/2 lbs green beans
1 1/2 cups tomatoes, peeled and finely chopped
2 onions, finely chopped
3/4 cup olive oil
1 green pepper, thinly sliced
1 bunch fresh parsley, finely chopped
2 garlic cloves, finely chopped
1/4 cup water
1 pinch sea salt
1 pinch fresh ground pepper
Directions:
1. Rinse the beans in cool water and cut of the tips and any stringy fibres.
2. Using a saucepan,sauté the onions in the olive olive until softened.Add the garlic and saute for a few further minutes.
3. Add all remaining ingredients and stir well.
4. Reduce the heat and simmer uncovered for around 50 minutes, or until the beans are tender. You may need to add more water if needed throughout this time.
