Ingredients:
1 lb fresh green beans, trimmed and halved
2 medium tomatoes, sliced
1 small onion, sliced
1/3 cup olive oil
3 teaspoons red wine vinegar
1 teaspoon dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Steam green beans for 6 to 8 minutes.
2. Put in cold water.
3. Place beans in the center of a platter.
4. Arrange tomato and onion slices around beans.
5. Whisk together dressing.
6. Sprinkle over vegetables.
7. Chill.
