Green Bean Salad

And have made it several times - REALLY good! Make sure you have the 'cold bath' ready when the beans are done.
Ingredients:
1 lb green beans, rinsed
2 t red bell pepper, finely diced
2 t red onion, finely diced
1 t jalapeno, finely diced
2 t vinegar, red wine
1 t olive oil
Directions:
1. Bring enough water to cover the green beans to a rolling boil.
2. Meanwhile rinse beans and pat dry. When water is boiling, drop beans in.
3. Boil for 5 minutes then promptly drain beans. Move immediately to a bowl with ice water to stop the cooking process and cool the beans.
4. While beans are cooling, dice remaining veggies.
5. Mix together with oil and vinegar in a medium bowl. Add completely cooled green beans.
6. Cover and refrigerate until ready to serve.
