This is a simple and easy salad that my Italian family always makes when we are not in the mood for lettuce. We eat some type of salad with almost all our meals. My grandmother would always bring Mentuccia (wild mint) back from her trips to Italy but here we just use fresh or dried mint. Some times I use lemon juice instead of vinegar. Your choice. Also you can garnish with lemon slices.
Ingredients:
1 lb fresh green beans
3 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
salt
fresh ground pepper
1 tablespoon dried mint or 1/4 cup fresh mint, chopped
Directions:
1. Steam or boil the green beans until they are tender, but not limp.
2. Drain and place them on a platter.
3. While still warm, drizzle with oil and vinegar.
4. Season with salt and pepper and sprinkle mint on top.
5. Chill well before serving.
