My husband and I created this delicious combination of vegetables and mushrooms. We had a garden with an over abundance of produce. This is so good, even my picky grandchildren like this. This is a very easy recipe.
Ingredients:
3 -4 carrots, cut into matchsticks
8 -10 mushrooms, sliced
8 -10 ounces fresh green beans
1 large onion, sliced lengthwise
1 -2 tablespoon olive oil
1 1/2 tablespoons basil
3 tablespoons parmesan cheese
1/2 teaspoon salt
Directions:
1. Cut carrots into 2 1/2 to 3 fairly thick matchsticks and cut green beans in half.
2. Steam beans and carrots until tender, approximately 10 minutes.
3. Meanwhile saute the onion and mushrooms in large frying pan until onion is translucent and mushrooms are tender, about 10 minutes.
4. Combine carrots and beans with saute'd mushrooms and onions.
5. Shut off heat under frying pan and add basil and parmesan cheese.
6. Blend together and serve warm.
