Green Bean and Cashew Nut Thoran

Another find at the hairdressers. Haven't tried this but will soon. Just wanted to post here instead of holding on to a piece of paper. This came from a British magazine.
Ingredients:
450 g green beans, cut into 2 . 5 cm pieces
1 tablespoon vegetable oil
125 g cashews
2 teaspoons mustard seeds
1 teaspoon cumin seed
15 curry leaves
2 1/2 cm fresh ginger, grated
2 green chilies
100 g fresh coconut, shaved
1 teaspoon sugar
1 lime, juice of
fresh coriander, to garnish
salt
Directions:
1. Blanch beans in salted water for 1 minute, then plunge into cold water.
2. Heat oil over high heat. As soon as oil smokes add mustard and cumin seeds and curry leaves.
3. When seeds crackle add ginger and chillies. Stir fry for a moment then add beans and heat through.
4. Add coconut, sugar, lime, coriander and nuts.
5. Toss together and season with salt.
