Greek Yogurt Pancakes

Best greek yogurt pancakes in the world
Ingredients:
3 eggs, lightly beaten
2 tsp. sugar
2 tsp. brown sugar
1 tsp. salt
1 c. flour
1 container (6 oz.) plain nonfat greek yogurt
2 tbps. melted butter
3 tsp. baking powder
2 tsp. vanilla extract
Directions:
1. 1. Lightly beat eggs in a medium mixing bowl. Then add yogurt, melted butter and vanilla and beat together. Gradually add the sugars, salt, flour, and baking powder.
2. Note: If the batter seems too thick you can add a dash of milk until its the consistency that you prefer. This will depend on how thick of yogurt you buy.
3. 2. Mix until smooth but do not over mix as this can make the pancakes tough.
4. 3. Cook on griddle over medium heat. Watch edges of pancakes for bubbles as an indications as to when they need to be flipped.
